Elote Salad is a refreshing and flavorful Mexican-inspired salad that combines the smoky sweetness of grilled corn with creamy mayonnaise, tangy lime, and spicy chili powder. Its the perfect side dish for your summer gatherings and BBQs.
Ingredients:
- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 2 tablespoons chopped fresh cilantro
- 1 lime, juiced
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup finely chopped red onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 1 jalapeo pepper, seeded and finely chopped
- 1 clove garlic, minced
- Lettuce leaves for serving
- Lime wedges for garnish
Instructions:
Warm the grill up to a medium-high level
For about 10 minutes, turn the corn over on the grill every so often until it is charred and cooked all the way through
Take the corn off the grill and give it a little time to cool down
Take the corn off the cobs
Put half of the cotija cheese, cilantro, lime juice, chili powder, paprika, salt, and pepper in a large bowl
Add the mayonnaise and mix it all together
Put the red onion, red bell pepper, green bell pepper, jalapeo pepper, and minced garlic into the bowl
Follow the steps on the grill
Spread the dressing over everything and toss it together until its well covered
Put the salad in the fridge for at least 30 minutes to let the flavors mix
Place the Elote Salad on a bed of lettuce leaves
Top with the rest of the cotija cheese and lime wedges
