Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
- 4 cups cooked sushi rice
- Nori seaweed sheets
- Soy sauce, for serving
- Wasabi, for serving
- Pickled ginger, for serving
Instructions:
Get the oven ready by heating it up to 400F 200C
Add minced garlic, grated Parmesan cheese, chopped parsley, salt, and black pepper to a bowl
Toss the shrimp with the ingredients until they are well covered
Place shrimp in a single layer on a baking sheet
After the oven is hot, roast the shrimp for 8 to 10 minutes, or until they are pink and cooked all the way through
Follow the directions on the package to make the sushi rice, then let it cool down a bit
On a sushi rolling mat, put a piece of nori
Cover the nori with a thin layer of sushi rice, leaving about an inch of space at the top
Place the roasted Parmesan garlic shrimp along the bottom edge of the nori sheet that has been covered in rice
Roll the sushi carefully, and use the mat to make it into a tight cylinder
With a sharp knife, cut the sushi roll into small pieces that are easy to eat
Spread soy sauce, wasabi, and pickled ginger on the plate and serve the roasted Parmesan garlic shrimp sushi
