Ingredients:
- 1 cup cooked lentils
- 1 cup grated zucchini
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 hamburger buns
- Lettuce leaves
- Tomato slices
- Sliced red onion
- Ketchup and mustard for garnish
Instructions:
In a large mixing bowl, combine the cooked lentils, grated zucchini, breadcrumbs, chopped onion, Parmesan cheese, egg, garlic powder, dried oregano, salt, and pepper
Mix everything thoroughly until well combined
Form the mixture into four burger patties
Heat a grill or grill pan over medium heat and lightly oil the grates
Grill the lentil and zucchini burgers for about 4-5 minutes per side or until they are heated through and have grill marks
Toast the hamburger buns on the grill for a minute or two until they are lightly browned
Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a lentil and zucchini patty, tomato slices, and sliced red onion
Spread ketchup and mustard on the top bun and place it on top of the burger
Serve the Lentil and Zucchini Burgers hot and enjoy
