This Black Bean Feta Quinoa Wrap with Avocado Tahini Sauce tastes great and is good for you because it is full of protein, fiber, and healthy fats. When you mix quinoa, black beans, feta cheese, and creamy avocado tahini sauce, you get a tasty filling that you can wrap in a soft tortilla.
Ingredients:
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1/2 cup crumbled feta cheese
- 1 ripe avocado
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- Salt and pepper, to taste
- 4 large tortillas or wraps
- 1 cup mixed salad greens such as spinach, arugula, or kale
Instructions:
Break up the feta cheese and add it to the cooked quinoa in a bowl
Put the mashed avocado in a different bowl
Add the tahini, lemon juice, water, salt, and pepper
Mix well to make the avocado tahini sauce
On each tortilla, put a quarter of the avocado tahini sauce
Add a quarter of the quinoa and black bean mix and a handful of mixed salad greens on top
As you roll up each tortilla to make a wrap, fold the sides in and roll it up tight
Cut the wraps in half and serve
