Ingredients:
- 1 9-inch tart crust, baked and cooled
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1/2 cup milk
- 3 egg yolks
- 2 tbsp cornstarch
- 1 tbsp unsalted butter
- 2 kiwis, peeled and sliced
- 1 cup strawberries, hulled and sliced
Instructions:
In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth
In another bowl, whip heavy cream and granulated sugar until stiff peaks form
Fold whipped cream into cream cheese mixture until fully combined
Set aside
In a saucepan, heat milk until steaming but not boiling
In a separate bowl, whisk together egg yolks and cornstarch until smooth
Slowly pour hot milk into egg yolk mixture, whisking constantly
Return mixture to saucepan and cook over medium heat, stirring constantly, until thickened
Remove from heat and stir in butter until melted
Let custard cool slightly, then pour into baked tart crust
Arrange sliced kiwis and strawberries on top of the custard
Chill tart in the refrigerator for at least 2 hours before serving
