This hearty beef stew made in a slow cooker is great for a night in with a good book. The flavorful broth, soft beef, potatoes, and carrots will warm you up from the inside out.
Ingredients:

- 5 lbs beef stew meat, cubed
- 4 potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
Place beef stew meat, potatoes, carrots, onion, and garlic in the slow cooker
In a small bowl, mix together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper
Pour the mixture over the beef and vegetables in the slow cooker
Cover and cook on low for 8 hours or on high for 4 hours, or until the beef is tender and vegetables are cooked through
