Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into strips
- 1 cup gluten-free breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- Cooking spray or olive oil for coating
Instructions:
Preheat the oven to 400F 200C
In a shallow bowl, combine gluten-free breadcrumbs, Parmesan cheese, paprika, garlic powder, onion powder, salt, and black pepper
In another shallow bowl, beat the eggs
Dip each chicken strip into the beaten eggs, then coat evenly with the breadcrumb mixture
Place the coated chicken strips on a baking sheet lined with parchment paper or aluminum foil
Lightly spray the chicken strips with cooking spray or drizzle with olive oil
Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the coating is crispy and golden brown
Serve hot with your favorite dipping sauce
