Ingredients:
- 200g noodles
- 2 cups mixed greens spinach, kale, arugula
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon chili flakes
- Salt and pepper to taste
- Grated parmesan cheese for garnish optional
Instructions:
As directed on the package, cook the noodles
Once done, drain them and set them aside
Warm up the olive oil in a big pan over medium-low heat
Add the minced garlic and cook for about one to two minutes, until the garlic smells good
Put mixed greens in the pan and cook for three to four minutes, until they wilt
Salt, vinegar, and chili flakes should be added and mixed in
Add one to two more minutes of cooking
Add pepper and salt to taste
Toss the cooked noodles in the pan for about two minutes, until they are well mixed and hot all the way through
If you want, you can serve it hot with grated Parmesan cheese on top
