Ingredients:
- 1 whole pastured chicken about 4-5 pounds
- 2 tablespoons olive oil
- 1 lemon, halved
- 4-5 cloves of garlic, minced
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Instructions:
Preheat your oven to 325F 163C
Rinse the pastured chicken inside and out, then pat it dry with paper towels
Place the chicken in a roasting pan
Rub the olive oil all over the chicken, inside and out
Squeeze the lemon halves over the chicken, then place them inside the cavity along with the minced garlic
Sprinkle the dried rosemary, dried thyme, sea salt, and black pepper evenly over the chickens surface
Tie the chickens legs together with kitchen twine if desired
Roast the chicken in the preheated oven for approximately 2 to 2
5 hours or until the internal temperature reaches 165F 74C
Let the roasted chicken rest for about 10-15 minutes before carving
Serve and enjoy your simple slow-roasted pastured chicken
