Ingredients:
- 1 cup citrus curd
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
Stir the heavy cream, whole milk, and granulated sugar around a few times as you heat them in a saucepan over medium-low heat until they just start to simmer
Mix the citrus curd with a whisk in a different bowl until its smooth
Pour the warm cream mixture into the citrus curd slowly while whisking all the time to mix
Put the mixture back in the saucepan
Cook over low heat, stirring all the time, for about 5 to 7 minutes, or until it gets thick enough to coat the back of a spoon
Dont boil
Take it off the heat and add the vanilla extract and a little salt
To get rid of any lumps, strain the custard into a clean bowl through a fine-mesh sieve
Cover the bowl with plastic wrap and press it right on top of the custard to keep a skin from forming
Put the custard in the fridge until it is completely cold, preferably overnight
Once the custard is cold, use an ice cream maker and follow the directions on the box
Move the ice cream that has been churned to a container that can go in the freezer
Freeze for at least 4 hours, or until it is firm
Serve and have fun
