Ingredients:
- 4 cups frozen sour cherries
- 2 ripe bananas, sliced and frozen
- 1/4 cup coconut milk
- 2 tablespoons maple syrup or agave syrup
- 1 teaspoon vanilla extract
- 1/4 cup vegan dark chocolate chips optional, for topping
Instructions:
In a food processor or high-speed blender, combine the frozen sour cherries, frozen banana slices, coconut milk, maple syrup or agave syrup, and vanilla extract
Blend until smooth and creamy, scraping down the sides as needed
If the mixture is too thick, you can add a little more coconut milk to reach your desired consistency
Once smooth, serve the soft serve immediately in bowls or cones
Optionally, sprinkle vegan dark chocolate chips on top for added flavor and texture
