Corn, Avocado, and Black Bean Summer Salad

This Corn, Avocado, and Black Bean Summer Salad is a tasty and healthy dish that is great for summer. Every bite is a blast of flavor from the sweet corn, creamy avocado, protein-packed black beans, and tangy dressing. Its great for barbecues, picnics, or a quick meal during the week.

Ingredients:

  • 2 cups of cooked corn kernels
  • 1 ripe avocado, diced
  • 1 can 15 oz of black beans, drained and rinsed
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of fresh cilantro, chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of lime juice
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Instructions:

The cooked corn, black beans, cherry tomatoes, red onion, and chopped cilantro should all be put in a large bowl together

Mix the cumin, salt, pepper, olive oil, and lime juice together in a different small bowl

Add the dressing to the salad and gently toss to mix everything together

Make sure everything is covered evenly

Put the salad in the fridge for about 30 minutes before you serve it so that the flavors can mix

Serve the Corn, Avocado, and Black Bean Summer Salad as a light main course or as a healthy side dish
