Ingredients:
- 1 and 3/4 cups all-purpose flour
- 1 and 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 and 1/2 tsp baking powder
- 1 and 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp pure vanilla extract
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 1/2 cup heavy cream
- 1 cup semisweet chocolate chips
- 1/4 cup powdered sugar for frosting
- Sprinkles for decoration
Instructions:
Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners
In a large mixing bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt
Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients
Mix until well combined, but do not overmix
Stir in the boiling water until the batter is smooth
The batter will be thin, but thats okay
Fill each cupcake liner about 2/3 full with the batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
While the cupcakes are baking, prepare the chocolate ganache frosting
In a microwave-safe bowl, combine the unsalted butter and heavy cream
Microwave in 30-second intervals until the butter is melted
Stir in the semisweet chocolate chips until smooth
Let it cool slightly
Once the cupcakes are done baking, let them cool in the tin for a few minutes, then transfer them to a wire rack to cool completely
Dip the cooled cupcakes into the chocolate ganache frosting, allowing any excess to drip off
Dust each cupcake with powdered sugar and decorate with sprinkles
Serve and enjoy your delicious chocolate cupcakes
