Ingredients:
- 4 medium-sized russet potatoes
- 2 tablespoons olive oil
- 1/2 cup unsweetened almond milk
- 2 tablespoons ranch seasoning mix
- 1/2 cup chopped fresh chives
- 1/2 cup cooked and crumbled bacon optional
- Salt and pepper to taste
Instructions:
Set the oven temperature to 400F 200C
After giving the potatoes a good wash and scrub, prick them all over with a fork
After giving the potatoes a quick oil rub, put them on a baking sheet
Bake for 4560 minutes, or until a fork inserted into them comes out tender, in a preheated oven
After taking the potatoes out of the oven, allow them to cool slightly
Remove the potato tops and remove the flesh, leaving a thin layer of flesh inside the skin
Mash the potato flesh until its smooth and creamy in a bowl with almond milk and ranch seasoning
Add half of the crumbled bacon if using and chopped chives
To taste, add salt and pepper for seasoning
Re-spoon the mixture of mashed potatoes into the potato skins
Reposition the filled potatoes onto the baking sheet and bake for a further 15 to 20 minutes, or until they are thoroughly heated and have begun to crisp up on top
If desired, garnish with additional crumbled bacon and the remaining chives
