Ingredients:
- 4 cups mixed fresh berries strawberries, raspberries, blueberries
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups whipped cream dairy-free for vegan option
- 1 1/2 cups gluten-free meringue cookies store-bought or homemade
- Mint leaves for garnish optional
Instructions:
In a large bowl, combine the mixed fresh berries, granulated sugar, and vanilla extract
Toss gently to coat the berries and let them macerate for about 10 minutes
While the berries are macerating, crush the gluten-free meringue cookies into small pieces
You can do this by placing them in a zip-top bag and gently crushing them with a rolling pin or your hands
In another bowl, whip the cream until stiff peaks form
If using dairy-free whipped cream, make sure its well chilled before whipping
Once the berries have macerated, layer the dessert in serving glasses or bowls
Start with a spoonful of whipped cream, followed by a spoonful of crushed meringue cookies, and then a generous portion of the macerated berries
Repeat the layers until the glasses are filled, ending with a dollop of whipped cream on top
Garnish with mint leaves if desired
Serve immediately or refrigerate until ready to enjoy
The gluten-free fresh berry Eton Mess is best when served soon after assembly to maintain the crunchy texture of the meringue cookies
